Ingredients:
- 2 cups granulated sugar
- 1/2 cup brown sugar, packed
- 3/4 cup heavy cream
- 4 tablespoons unsalted butter
- 1 1/2 cups pecans, chopped
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Line a baking sheet with parchment paper.
- In a heavy saucepan over medium heat, combine sugars, cream, butter, and salt. Stir constantly until mixture comes to a boil.
- Continue cooking, stirring occasionally, until mixture reaches 238°F (soft-ball stage) on a candy thermometer.
- Remove from heat and stir in pecans and vanilla.
- Beat vigorously with a wooden spoon until mixture thickens and loses shine (about 3-5 minutes).
- Quickly spoon dollops onto prepared baking sheet and allow to cool completely.
- Store pralines in an airtight container.
